About the Recipe
A beautiful purple potato dish, a tasty side or a hearty snack.
2 pounds of purple potatoes
5 tablespoons melted butter
4 cloves garlic, minced
1/ 4 cup coconut oil
4 tablespoons of Roasted Delicata spice blend
Fleur de sel and white pepper to taste
Wash, peel and cut potatoes into wedges.
Bring a pot of water to a boil and parboil the potatoes until al dente. Drain and place them in a bowl
Line a baking tray with parchment paper and preheat the oven to 180c/350f.
In another bowl combine the melted butter, coconut oil, minced garlic and Roasted Delicata spice blend, and mix to combine. Drizzle over the potatoes. Toss making sure all of them are covered and season with white pepper and fleur de sel.
Place potatoes on a lined baking tray making sure there is space between each of them (2 baking trays may be required)
Bake in the oven for 50 mins or until crispy golden brown.
